Dr Ngoi hosted a grand dinner at Imperial Treasure Great World on 13 July 2026 to welcome Pablo Alvarez, winemaker/owner of Bodegas Vega Sicilia, back to Singapore. Pablo isn’t a man of much words, but his generosity knows no bounds and it is always a pleasure to reciprocate his kind hospitality to us whenever we find ourselves in Spain.
2013 Champagne Krug. Light golden hue. Cool tones dominate with a broad expanse of keen citrus that exert elegant intensity. Not too dry, finishing with a distinct note of pomelo.
2009 Maison Louis Jadot Clos de la Roche Grand Cru. Poured from magnum. Evolved crimson, exuding perfumed rosy hues with a relaxed restraint. Equally gentle on the integral medium-weight palate, displaying quiet intensity with imperceptible tannins, yielding great clarity and purity of fruit that fleshed out with brighter acidity amid a dash of saline over the next three hours. Highly elegant.
2017 Domaine de Montille Puligny-Montrachet 1er Le Cailleret. Pale. Reticent at first, only a hint of nutmeg, before eventually exuding a full presence of orchard and tropical fruit with delicate detail, well layered within a certain oily density. Beautifully integrated and rounded with a cool controlled intensity. Not the reductive type. Montille’s plot of Cailleret lies immediately adjacent to Montrachet Grand Cru Marquis de Laguiche along the same exact longitude, separated only by a small road.
2022 Domaine Roulot Meursault Narvaux, courtesy of Sir Bob. Pale. This wine opens with a suggestion of cool morning dew with subtle layers of white fruits. Less reductive than usual on the palate, imparting notes of nutmeg, summer floral tones and a hint of tropical fruit with restrained intensity and clean precision. Modest finish.
2015 Bouchard Père et Fils Chapelle-Chambertin Grand Cru. Rusty pinot tint. Distinctly herbal on the nose, resembling pochai pills, though quite vivacious on the medium-weight palate, carrying a good expanse of ripe red fruits laced with attractive acidity. Glowing finish.
1993 Domaine Comte Georges de Vogüé Bonnes-Mares Grand Cru, courtesy of Barrie. Evolved tint of pinot. Still amazingly supple and lively, boasting dense dark fruit and refined minerally presence in equal measure within its fleshy structured tannins, imparting fine intensity.
2009 Domaine Emmanuel Rouget Échezeaux Grand Cru, courtesy of Boon. Classic pinot tint. This wine opens with a minty lift, generously proportioned with a deep integral expanse of red fruits, plums and cinnamon within structured pliant tannins, still laced with a dash of enamel throughout its long cool finish.
2010 Domaine Prieuré Roch Clos de Vougeot Grand Cru, courtesy of Winfred. Classic pinot tint. Good lift of rose petals, raspberries and mulberries, while the medium-full palate displays a distinct salinity along with other characters of warm pebbles, shrubs and firm acidity, finishing with a certain note of stems.
2002 Vega Sicilia Unico Gran Reserva. Poured from magnum. Displaying an evolved crimson, this wine opens with notes of leather and dark plums on the nose. The medium-weight palate is rather inviting with a fine density of dark fruits, fleshing out with savoury overtones whilst maintaining a controlled elegant intensity within quiet supple tannins.
Vega Sicilia Unico Reserva Especial (blend of 1994, 1995, 2000). Good colour. Fairly deep crimson, proffering rhubarb and balsamic elements. Medium-weight. Darkish in tone but highly supple, structured with elegant smooth tannins with a distinct undertow of tea leaves. Rather restrained at first, gradually turning a little brighter.
Vega Sicilia Unico Reserva Especial (blend of 1994, 1999, 2000). Some crimson. Darkish tones of blackcurrants and blueberries. Very well integrated with rounded smooth tannins, fleshing out with greater fullness and layering, tinged with a distinct note of tea leaves amid savoury overtones.
1988 Château Climens, courtesy of Dr Clifton Chan. This top wine of Barsac displays a heavier shade of gold, proffering a delicate lift of apricot and nectarine. Beautifully integral, boasting glorious seamless layers of golden fruit that impart controlled sweetness with a deeper vein of intensity. Distinctly more feminine and lithe compared with Sauternes. Superb!
